Sévery Mill, Oil mill owned by Bovey and son

The traditional oil mill at Sévery makes walnut oil and 11 other oils, as well as a range of terroir products. This enterprise, owned by the Bovey family in the 6th generation, also organises the Walnut Festival.

Built in 1845 on the bank of River Morges, this Mill has been run for six generations by the Bovey family.

The Sévery Oil Mill perpetrates traditional techniques to produce several types of oil: walnut, hazelnut, pistachio, colza and colza-flax, peanut, sesame, almond, pumpkin and raisin seed, pine kernel and sunflower. The Mill presses the nuts the old-fashioned way: the ingredients are crushed and yield a fine and compact paste. The paste is then toasted slowly, a process which densifies the aromas. A hydraulic press presses the paste through natural canvas.

Walnut oil represents over 60% of the mill’s production. It also makes aromatic mustards and “aigredous”, a choice seasoning.

The Sévery Mill organises the Walnut Festival or Perfume of Colza. It also holds gastronomic workshops and gourmet evenings. Its products are on sale in the on-site shop, in various other shops and via its Internet site.
