Jacques-Alain Dufaux is a passionate cheese monger in the Old Town of Morges. He is proud of his careful selection of cheese delicacies, above all of the creamy Tomme with a flowery flavour of the Joux Valley or the Etivaz, a popular cheese specialty that consists of a hard raw milk crust, belonging to the Vaud AOC. But we must not forget the Gruyère cheese, of which Jacques-Alain Dufaux has dozens of wheels in his cellar in order to let them ripen.
