This revival is led by Mr. Laurent Hansen, a passionate professional of front-of-house service and human connection, and a true expert in hospitality and catering. Driven by a clear vision, he aims to restore the noble character of a traditional Vaud village inn and to definitively turn the page on the past.
Here, nothing has been left to chance: the welcome, the spirit, the cuisine and service, the décor, and even the music have all been reimagined to offer a sincere, coherent, and intentional experience.

The cuisine draws inspiration from traditional Vaud inns and Lyonnais bouchons. A brasserie and bistro-style cooking that is clear, honest, and deeply rooted in the local terroir.
