The Couvaloup brewery produces high quality craft beers in Apples, just above Morges.
Brasserie de Couvaloup Sàrl, based in Apples, in the Hauts de Morges region, was founded in 2015. Its brewmaster, Alexander Rockinger, who holds a PhD in Biology, brings scientific precision as well as a constant focus on cleanliness and hygiene to his work – essential factors for producing quality beers. His deep knowledge of biology and chemistry is a significant advantage in ensuring optimal brewing processes.
The brewery continues to produce beers in the "classic style," while constantly innovating with original creations such as IPAs, beers in different colors, and jasmine-flavored beers. The "Éphémères," on the other hand, accompany the seasons with limited-edition releases.
All beers are brewed with care using spring water from the village of Apples and carefully selected European ingredients, without compromising on quality.
The brewery is committed to sustainable production and uses 400 m² of solar panels on its roof to meet its energy needs. In addition, the cooling water is collected and reused in other brewing processes. Finally, the spent grains are not discarded but repurposed as feed for the cows in the neighboring village.
